yummy soup



Well it is finally getting cold in the South... Therefore, I was in the mood for some "yummy soup". I call it "Yummy Soup", but it is really 7 can soup. So easy and so good. All you need are 7 cans of:

Kidney Beans
Rotel
Whole Kernal Corn
Diced Tomatoes
Chili with beans
Chili without beans
Veg-All


Pour into pot, no need to drain, just mix all together and bring to a boil. Let it simmer for a bit. Enjoy!

Of course it is always better the next day, once all the ingrediants have had a chance to sit together : Delicious with some corn bread.

Something to hold your ideas
Albums : Now that Justin and I are all settled in our condo, we want to start painting! We plan to start in January, so I have started gathering ideas. To stay organized I use old binders and photo albums as my "Interior Ideas" - Stash fabric swatches, paint chips, pictures from Traditional Home and Real Simple in the album so you can make sure that wall art matches perfectly before you make a special trip to Z-Gallerie.




Something to hold your papers
Shoe Boxes : Save your shoe boxes to use to store small items- don't waste your money on small crates at Target and TJ Maxx when you can make shoe boxes look fabulous with your own creativity. Cover the shoe boxes with old wall paper, fabrics, magazine pages, etc. I love this look mixed with an old rugged piece painted in white.

SAVE - Debt is not an option.


Being newly married brings a new perspective to saving. Joining accounts is quite an adjustment.

A coworker let me borrow the Dave Ramsey CD’s to listen to on the way to work. It motivated me to start saving NOW. The question is how.

Below are some key goals that are an inspiration to taking it one step at a time.

1) Kill Debt. Simply calculating how much you spend each month on your debts will illustrate that eliminating debt is the fastest way to free up money. Once the money is freed from debt payment, it can easily be re-purposed to savings.

2) Set savings goals . ie: emergency fund, retirement, new sofa, etc. Figure out how much you’ll have to save per week, per month, or per paycheck to attain each of your savings goals.

3) Establish a time-frame. Set a particular date for accomplishing shorter-term goals, and make sure the goal is attainable within that time period. 5

4) Make a budget. Once you’ve managed to balance your earnings with your savings goals and spending, write down a budget so you’ll know each month or each paycheck how much you can spend on any given thing or category of things.

5) Stop using credit cards. If you don’t have the money, you shouldn’t buy it. It is much rewarding when you save and are able to pay cash, instead of stressing about a credit card payment.

6) Open an interest-bearing savings account. It’s a lot easier to keep track of your savings if you have them separate from your spending money.12

7) Pay yourself first. Savings should be your priority, so don’t just say that you’ll save whatever is left over at the end of the month. Deposit savings into an account (or your piggy-bank) as soon as you get paid.

Once you get this you can start creating an Emergency fund – it is the key to living. The rain will come, trust me. Think of how it will feel to have the money saved when the car trouble comes or a layoff.

Enjoy the simple pleasures in life. Get creative with making things, reading, listening to your vinyl’s. Get together to discuss philosophy or pray; game night, puzzles or make crazy quilt pillows; play instruments. You can have a lot of fun on a small budget. You can create and keep genuine friendships – remember we are here to serve, not to be served. The more you save, the more you can give!

oh capri.

I am obsessed with these Capri candles from Antrho. Justin even loves how they make our home smell so refreshing, and they also make great gifts!

Go home and light one up with a glass of wine...ahhh, the weekend in deed!

new chapter.



It has been almost two years since I updated my blog! My friend, Meg, inspired me! In the past two years I met an amazing man - now my husband, moved to Nashville, changed jobs, and we just bought a condo that we are making our home. I feel so blessed!

an apple a day.

Thankful today is Friday...inspriration for the day...Apple Cider...can't wait to cuddle up on the sofa with a quilt to enjoy!



Ingredients
6 cups apple cider
1/4 cup real maple syrup
2 cinnamon sticks
6 whole cloves 6 whole allspice berries
1 orange peel, cut into strips
1 lemon peel, cut into strips

Directions
Pour the apple cider and maple syrup into a large stainless steel saucepan.

Place the cinnamon sticks, cloves, allspice berries, orange peel and lemon peel in the center of a washed square of cheesecloth; fold up the sides of the cheesecloth to enclose the bundle, then tie it up with a length of kitchen string.

Drop the spice bundle into the cider mixture.

Place the saucepan over moderate heat for 5 to 10 minutes, or until the cider is very hot but not boiling.

Remove the cider from the heat. Discard spice bundle. Pour into your favorite big mug, adding a fresh cinnamon stick and enjoy!

1 cup of cider equals: 163 calories 0.1g of fat

Solitude


Well the day finally came...my last day of selling commercial printing! Friday was my last day at work. As I drove away and merged onto 52 West the past three years started running through my head- how I ended up selling commerical printing and thankful I landed at Stratton. The drives I used to make to Irvine, sitting in traffic for three hours on Fridays, not getting paid on time, my back and face breaking out because of the stress of it all. I remember thinking...I have a college degree...what am I doing?! Looking back I see God had His hand in it all. If I wouldn't have taken the job in Irvine, I wouldn't have ended up at Stratton where I learned so much about marketing, print, design and most importantly, my passion for publishing.

My boss let me go a week earlier than planned, but surprised me by giving me my paid two week vacation. It was certainly God showing me once again...Hang in there Emily- I will bring good from all of this...keep listening...I will show you the way. So here I am typing a blog on a Tuesday morning at 8 am. All I have planned today is lying by the pool, reading a book- by the way... Eat, Pray, Love by Elizabeth Gilbert http://www.amazon.com/ is a perfect read for me at this time. I highly recommend it for any one going through change- having lunch with a friend, and then going to the gym for Cardio Muscle. Yesterday, (my first day not having to go into the office...the first time in four years) driving around Del Mar and La Jolla I noticed all the beautiful things by the ocean- the trees, the way the tide is right on time, the flowers, the fresh sea breeze, the cliffs...I could go on and on...while enjoying all these moments, it hit me...God you are so good! You gave me two weeks of alone time. Time to spend with you in harmony, so you can fully prepare me for what is to come with the move. I am so thankful for this time. I will cherish each day. Thank you for blessing me with the amazing San Diego experience- it has changed me and through it you have changed me. Looking at life through your eyes and not my own.
